Recipes and how to make Grilled Oxtail Sauce

1,000 g oxtail
2,000 ml of water, for boiling
5 cm of ginger, crushed
2 tsp salt
1 tsp pepper powder
100 g carrots, 1½ cm across
100 g of potatoes, slices of 2 cm dice
1 stalk of leeks, slice 2 cm
1 stalk of celery, slice 2 cm
Basting spices
5 tablespoons sweet soy sauce
3 tablespoons of cooking oil
1 tbsp fried garlic, puree
T teaspoon pepper powder
1 tablespoon of lime juice
Sambal Chili
3 tablespoons of cooking oil
5 red chili, roughly sliced
10 red cayenne fruit
5 red onions, roughly sliced
3 garlic cloves
1 tsp shrimp paste cooked
75 g of tomatoes, sliced up
1 tsp salt
1 tsp of sugar
How to make:
1. Cut the oxtail according to the section, wash it, remove excess fat if you like. Boil in water with ginger, salt and pepper. After boiling, reduce the heat and continue to boil until the oxtail meat is tender.
2. Remove the tail from the cake and measure the volume of 1,500 ml. If it's lacking, add enough boiling water. Add carrots and potatoes, cook until both are cooked. Add the chives and celery, reduce the flame. Keep the soup on the stove to keep it hot.
3. Brush the oxtail with spreads until even. Heat the grill over the fire, burn the tail while turning it until it's browned and the aroma comes out.
4. Sambal: Heat oil in a pan, fry chili, onion, shrimp paste and tomatoes until wilted and the smell is gone, lift. Blend using mortar, add salt and sugar, mix well. Transfer to container.
5. Presentation: Place the oxtail and chili sauce on a serving plate, serving with chili, soup, and rice in a separate container.
